Elaboration
It took us 7 YEARS of work to make these new wines using the French Ancestral Method. Before sparkling wines became so well known in Champagne, they had already been produced in the South of France since the middle ages. At the time, it was thought that effervescence was created by the influence of the moon or demons. Our idea was to reinvent this method to make wines that are FRUITY, ELEGANT AND NATURALLY LOW IN ALCOHOL. It was Muscat from the South of France that gave us the best expression of the style we were looking for.
